This is an incredibly easy recipe to prepare, which is perfect for newbies to raw food. This can be used as a starter, as a side dish, or even as a main meal. Personally I just had it as a main course because it was so delicious I couldn’t stop eating it. As a variation, you could make the dish spicy with some chilies or add different spices to it.

Ingredients for the raw vegan marinated cauliflower:
For the vegetables:
- 2 cups of cauliflower
- 1/4 cup asparagus
For the dehydrated cherry tomatoes:
- 1 cup cherry tomatoes
- Salt
- Olive oil
- Apple cider vinegar
- Herbs of choice
For the tomato sauce:
- 1 tomato, grated
- 1 – 1.5 tbsp. apple cider vinegar
- 2 tbsp. olive oil
- 1/2 tsp. salt
- 1 clove of garlic, squished and cut into tiny pieces (optional)
- 1/2 – 1 tsp. liquid sweetener of choice
- cilantro and/or dill (just a little bunch)
- 2 tbsp. chive (optional)
How to prepare the raw cauliflower:
The vegetables:
- Cut up the cauliflower into small pieces, roughly the size of a raspberry.
- Cut the asparagus into small pieces (just the top bit).
The cherry tomatoes:
- Prepare the cherry tomatoes separately. Cut the tomatoes in half and sprinkle some salt, herbs and pour a few tea spoons of the rest of the ingredients to taste.
- Dehydrate at 60ºC for 1 hour (it will still be raw). You can either keep dehydrating them (turn the temperature to 42ºC after the first hour) or keep them as they are, depends on your taste.
- If you don’t have a dehydrator, don’t worry, just serve the cherry tomatoes as they are.
Tomato sauce:
- For the tomato sauce, you can just grate the tomato using a large grater and mix the puree with the spices. Alternatively you can use a blender to blend all of the sauce ingredients together.
- Put the cauliflower and all of the tomato sauce ingredients into a bowl and mix well. Make sure to “massage” the cauliflower as it will make it softer. Leave it for at least 30 mins to soak.
- Add the dehydrated cherry tomatoes and mix lightly to incorporate.
You have an option – to dehydrate the salad or not. This will help you soften the cauliflower and it will taste nicer in my opinion, but it’s not essential.
