When I first found out that you can make raw rice out of parsnips, I had no idea that it could be so TASTY! Of course it doesnt taste like cooked rice, but it doesn’t taste like raw parsnips either, try it and find out for yourself!
You can use this as a side dish for meals like raw curries, but I personally love using this as a filling for dehydrated tomatoes.
You can substitute the walnuts for other nuts or seeds – experiment.
Ingredients for raw parsnip rice:
4 parsnips
1/2 cup walnuts
1/4 cup sesame seeds
7 large sundried tomato halves (soaked)
2-3 tbsp. Apple cider vinegar
1 tbsp. olive oil
1 tsp. salt
Handful of cilantro
How to prepare:
Using a food processor, mix all of the ingredients until the parsnips reach the size of normal rice, or just slightly bigger.
Thats it!
This is what the stuffed tomatoes look like, if you want to give it a try! Just cut the tomatoes in half, scoop out the insides, marinate in some salt and olive oil, then dehydrate for a couple of hours.
And you can add other things on top, whatever you like best!
